Lobster Ravioli & Jim Barry Shiraz, Lodge Hill

Handmade pasta pillows filled with tender lobster meat, ricotta, mascarpone, and a hint of lemon zest, served with a delicate cream sauce. The richness of the lobster is beautifully enhanced by the structured dark fruit and subtle spice of the Shiraz, creating a luxurious, balanced pairing.

Crispy Pork Belly & Petaluma Chardonnay

Succulent, slow-roasted pork belly with golden, crackling skin, finished with a light brown sugar glaze. The creamy, buttery notes of the Petaluma Chardonnay cut through the richness, while its subtle oak and citrus hints complement the savory, caramelized flavors of the pork.

Blue Point Oysters & Torbreck Semillon

Freshly shucked Blue Point oysters served on the half shell with a simple lemon wedge. Crisp and briny, each oyster is perfectly matched with the Hunter Valley Semillon, whose bright citrus and mineral notes highlight the ocean-fresh flavor of the shellfish.

Lamb Sliders & Torbreck Juveniles Rouge

Mini brioche buns filled with juicy lamb patties, caramelized onions, feta, and a tomato chutney. The bright red fruit and gentle spice of the Torbreck Juveniles Rouge complement the rich, savory lamb while enhancing the fresh herbaceous notes of the garnish.

Chocolate Lamingtons & Pewsey Vale Riesling, Eden Valley

Classic Australian sponge cake squares dipped in chocolate and rolled in desiccated coconut. Served in tasting-sized portions, each bite is paired with a crisp, lightly sweet Eden Valley Riesling that balances the richness of chocolate and coconut while leaving the palate refreshed for the next indulgence.
